Deleting them from your iTunes library does not directly delete them from your iPod.
From the manual:
Remove books. Tap Select, select some books, tap Delete, then choose an option.

Jun 12, 2016 3:22 PM in response to lllaassby Drew777,I've deleted some by sliding the icon to the right (on iPod)
I've deleted them in iTunes (making sure I'm deleting them from 'On My Device' not just my HD library.
I've just deleted them all off my iPod with iTunes and they're still on my iPod.
(again, I delete them off my device, not just my iTunes GUI)

If that isn't the issue then the following steps should help, assuming all of the content you want is in your library. (If it isn't see Recover your iTunes library from your iPod or iOS device.)
Backup device.
Restore as a new device.
Restore the backup you made earlier.
