You must select all photos to sync, every time that you sync, or the photos that are already synced to the phone from iTunes will be deleted. What this entails is putting all photos into one main syncing folder and selecting that folder to sync. You can have multiple folders within that one main photos folder, but you have to select those folders every time that you sync. As long as you do not uncheck those folders, you do not heave to select them again.

If you want to use sub folders, place the new photos that you want to sync into a folder and name that folder. Place that folder inside the folder that you are currently syncing your photos from. Connect your phone to your computer with the cable and launch iTunes. Select the phone from the devices icon at the top. Click on the Photos tab in iTunes. Go to the Copy Photos from drop down menu and select that main folder of photos. You can then select the sub folder to sync as well. Click on Apply in the lower right corner of iTunes to sync the phone.

Alternately, you can simply place all of your photos into one main folder and simply select that one folder in the Copy Photos from drop down menu.

    This might help.
