Is there a way to change the order in which several AirPort express are connected to a network (an AirPort Extreme). It looks as if they now are connected in series, but I want to connect them all to the AirPort Extreme (Like sun rays rather than a chain).

Apple's "extend a wireless network" feature works on signal strength. Another way of saying the same thing would be to state that two things must occur in order for things to work correctly.
1) Each AirPort Express will need to be located about the same distance from the AirPort Extreme
AND
2) Each AirPort Express must be closer to the AirPort Extreme than it is to any other AirPort Express.
