Llog into your Apple ID /Store account on a web browser. You can edit your account details there.

You can only remove one payment method by supplying another in your account details. Swap one credit card for another, or redeem an iTunes Gift Card and then remove a credit card, etc. Or choose the None option if it is available in your approved payment methods.
