when you block a phone number or contact, they can still call you or send you a message, but you won't get a notification. Does this mean the phone will show the message and I wont get a beep or vibration, or it will not show at all?

When one of your contacts has been blocked through your iPhone Settings, from their end it will appear as though you are simply not responding. On your end, your iPhone never receives any notice, indication, or message as ever having been received. You will see nothing from this contact unless you unblock them or they use a different chat application or phone number to contact you by.
