Welcome to the Apple Support Communities! It sounds like you are encountering some unexpected static while recording with your Rode VideoMic Go and your iPhone 6s Plus. I know that having crystal clear audio is super important, and I'll be glad to give you some suggestions.
To isolate this issue, I'd recommend that you test using another connection cable between the microphone and your iPhone. Also, try recording with the microphone and another device (e.g. another phone, computer, etc). Finally, remove the iPhone from the case to see if the audio quality has improved.
