I have some apps that I have deleted from my iPhone, which still appear in iTunes, but which I am not going to want to reload. I have tried highlighting the apps in iTunes and pressing the delete key, or shift and delete, but neither option works. The Edit menu has no delete option, and Cut is greyed out. Is it now impossible to delete apps permanently?

When you say "iTunes" do you mean "iTunes Store"? You cannot delete purchases from the Store, only hide them.
Select Apps in iTunes as I have in the top Left. From here, you can delete Apps that are archived on your computer in iTunes.
