To clarify the terminology: your watch and iPhone will remain "paired" unless and until you manually unpair them.
Whilst they remain permanently paired, they may become "disconnected" from time to time - such as when taken out of Bluetooth range of each other. Normal Bluetooth range is around 33 feet / 10 meters, but this will vary in practice due to wireless interference.
The following steps may help to address an unusual level of Bluetooth disconnections:
- If you have not yet done so, update your iPhone and Apple Watch to the latest software, starting with your iPhone:
- Restart both your iPhone and your watch:
- Turn both devices off together, then restart your iPhone first;
- To turn your watch off: press and hold the side button until you see the Power Off slider; drag it to turn off;
- To turn it back on: press and hold the side button until you see the Apple logo.
- Reset the network settings on your iPhone (you will need to re-enter your Wi-Fi credentials afterwards):
- On your iPhone, go to: Settings > General > Reset > Reset Network Settings.

The Watch app on your iPhone takes a backup of your watch when unpairing via the app. Choose to Restore from Backup when offered the option during set up. Most data and settings will be restored, with some exceptions (eg Apple Pay cards, passcode).

When your iPhone won't stay paired with your Apple Watch ...
On your iPhone tap Settings > Bluetooth
Toggle Bluetooth OFF then back ON.
See if that makes a difference.
