Q: restore historical backup data from iTunes

Not far.  An iTunes backup is meant to be a backup (to recover from a catastrophe), not an archive (repository of old data).

Use iTunes' menu to go to iTunes > Preferences > Devices and you can see what backups you can access there.

If the only backup you see was created today, then unless you also create an iCloud backup (which you did not do unless you explicitly set it up), then the old data is gone.

If you're looking to retrieve an old iTunes purchase, that would be available through the iTunes Store.
