If I’m understanding you right, you're trying to uninstall iTunes, as well as it's components, but you keep receiving an error telling you the configuration data is corrupt when removing the Apple Software Update component. I know how challenging it can be when software errors arise that don't seem to make sense so I can see why you'd reach out for help with this today.
The issue you're experiencing is usually due to a problem with your Windows software, typically involving the "registry" which is a database in Windows that contains important information about system hardware, installed programs and settings, and profiles of each of the user accounts on your computer. To begin troubleshooting this, you want to first make sure you're signed into an Administrative user account on your PC. Use the steps in the following Microsoft article to verify you're logged in as an Administrative user:

Next, follow the troubleshooting steps in the article listed below. Don't be alarmed that the article itself lists steps said to be for an error message that is different than the one you're receiving since the steps are the same regardless.
If you see a "Windows installer package" error message when you try to uninstall iTunes from your PC
If you're still experiencing difficulties uninstalling the Apple Software Update iTunes component, the next step would be to reinstall iTunes on your PC and then attempt to uninstall it again. When uninstalling iTunes the second time, make sure to follow the steps listed in the article below. It's very important you follow those steps exactly as written, making sure to remove iTunes and it's components in the specific order outlined in the article.

For general advice see Troubleshooting issues with iTunes for Windows updates.
The steps in the second box are a guide to removing everything related to iTunes and then rebuilding it which is often a good starting point unless the symptoms indicate a more specific approach. See the notes below. In particular see the Microsoft Program Install & Uninstall tool in note 1 below the box.
