I want to sync photos to my iPhone from iTunes. It's done it in the past but now I can see that under photos in iTunes I can't choose Photos (or Aperture) as an option, just my Pictures folder.
How do I fix this please?

If I understand correctly, you are unable to select the Photos app in iTunes on your Mac as part of the iPhone syncing process. Let’s start with these easy steps to help resolve this issue:
1. First, restart your Mac, as well as your iPhone.

2. Next, make sure you have all available OS X, iTunes and Photos updates installed

OS X El Capitan: Install, update, and uninstall apps
3. Then try your sync via USB again. Make Photos is open while iTunes is open, before you connect your iPhone.

Is your Photos Library enabled as the system Photo Library? "Use as System Photo Library" should be greyed out in he Photos Preferences > General.
For your Aperture Library try if enabling "Share XML with other application" in the Aperture > Preferences > Previews will help.
