I have a NEW 2015 MB Pro and I ordered a CTO with the AMD graphics, so I opened the "About this mac" page and it showed that it's an Intel Iris Pro GPU. A bit disappointed I called the retailer and they told me to check under the system report and there it was an AMD GPU, so why would apple not show the AMD on the About this mac page if it does have an AMD GPU ??

If I remember correctly, it shows the video card that is currently in use. Click on System Report and select the video section, to see if the AMD is present.

Yes I do see AMD GPU if I go: System Report>Hardware>Grsphics/Dispaly
I guess I have to just start installing my Adobe software to see that is would switch over to the AMD and hopefully shows up in the "About this Mac" page.

Esquared has it correct, it will show the processor in use at the time you check the About this Mac.
The system automatically switches between graphics systems based on use (when applications use OpenGL, Core Graphics or other graphically demanding technologies, the system will use the dedicated graphics card, otherwise it will use Intel HD Graphics to conserve battery life).
