I don't want to change the font in an email so the recipient gets huge font but I want to change the size I view on the screen as its too small. All previous posts tell me to go to Mail, Preferences, Fonts & Colour but I can't see the selections I am being told to make. I only get 3 options:

Fixed Width Font

Hi am thank you. This only works when you select a message that has already been sent or received. How do I make the type larger when I am authoring an email. I don't want to increase the font size. This results in the person receiving the email getting huge letters.....
You can use the Command+(plus sign) and Command+(minus sign) to zoom in or out of an email.
This doesn't appear to do anything to the view of the email I am writing but it does work on Safari screens. Any other ideas?
Use Mail's menu:
Window > Zoom
You can zoom the entire screen with the correct setting in System Preferences>Accessibility>Zoom…
Or change the display resolution. Other than that, you would be enlarging what the recipient sees.
This only makes the email full screen size but doesn't make the text any larger.
That doesn't work either as it just zooms the screen in and you then can't see all the email on the screen and it goes all fuzzy. I just want to view it in a larger font rather than zooming into a specific area of the screen. This must be possible surely; I'd need binoculars to see the Font 12 text on the screen!
Correct. Try Zooming. You can use the scroll gesture or enable the keyboard shortcuts.
It zooms centered on the cursor position. Don't zoom in so much. 😎
Tried that too and just zooms in as above! I want to see the whole email, just in larger font but not effecting the recipient's email.
That you can't do.
You could do that on an iPhone or iPad 🙂

They will also change the default font used to compose, but Mail will generally send the equivalent of Plain Text unless you change the fonts/colors/sizes in the message itself, so it won't send the way you see it.
Open mail app > mail preferences > fonts & colors > in message font > click on select > choose as required .

I found an answer. I love my HD monitor, but then I cannot see the text. All the other apps have a user adjustable setting to help, including Mail for reading emails. The command + only works for reading emails. I found this on one of the help sites. It was just a little one line reply and it was the answer. It is a little scary as it looks all computer programmer complicated but here is what was suggested to me and it works!
Quit the Mail App and go open the Terminal App under Utilities. When it opens a little programmers window opens with some very computer-ish looking text. Copy the line below and then paste it into Terminal, hit enter and then restart the computer.
