We set up family sharing through my son's (3 years old) ipad and he is listed as the organizer. I am trying to delete that family sharing and set it back up with myself as the organizer. Any ideas on how to do so?

You should be able to remove everyone from family sharing which should do what you want.

Ha! I hope he didn't set up "Ask To Buy" on you! 😁
Anyway, I am not sure how a 3 year old got to be the Organizer. If you can access his account, you can disband the Family group per this guide:
Leave Family Sharing - Apple Support
However, if any member is known to be under 13, they are not allowed to be outside of a Family Group, and you will have to do a few extra steps:

Yes, quite likely, or else that account could not be the Organizer.
