Thanks for bringing up your question here in the Apple Support Communities. If iTunes is asking for a password to deselect the encryption, it seems you may have inadvertently created an encrypted backup. You can read about encrypted backups here: About encrypted backups in iTunes.
There is nothing we can do to recover that password, but you have other options. You can back up using iCloud and this wouldn't be encrypted. You can learn about this here: How to back up your iPhone, iPad, and iPod touch - Apple Support
