Instagram app won't rotate to landscape mode
Was anymore able to work around this? It's stuck on portrait and can't be forced to rotate through assistive touch options.

There is no way to work around this. The instagram App simply does not support screen rotation.
Its up to the App developers to enable this option, and support it, and Instagram does not do this.
You may want to contact the App developer and let them know you would like it to rotate.
