Q: My son has his own Apple ID now. When he goes to update his apps it  asks for ID verification of the old ID

My son has his own Apple ID now but when he tries to update his apps it asks for my Apple ID password. He is signed in under new ID. We have tried signing off and back on several times and no change. Any ideas?

Apps that were purchased/downloaded with the old ID are permanently locked to that ID. He will need to have that ID and password to update those apps, or he will have to delete all of those apps and purchase/download them again. There is no way to change the Apple ID for the apps.

Whatever purchases were made with the previous Apple ID will forever be tied to that Apple ID. It doesn't really matter during normal use, but, as you discovered, it does matter when attempting to update or re-download.

If these are mostly free apps, he can download them with his Apple ID. Otherwise, look into setting up Family Sharing.
