If you have not yet done so, it may help to update your iPhone and Apple Watch to the latest software, starting with your iPhone:
- Update the iOS software on your iPhone, iPad, or iPod touch - Apple Support
- Update the software on your Apple Watch - Apple Support
Check also that Wrist Detection is turned on:
- On your iPhone, in the Watch app, go to: My Watch (tab) > General > Wrist Detection - turn on.
- Note that sensor performance can be affected by temporary or permanent changes to your skin, such as by some wrist tattoos.
For the best results, Apple suggests that you consider tightening your watch band before workouts and loosening it again afterwards.
To avoid accidental interactions with your watch during your workout (including ending workouts early), you can lock the screen:
- At any time after starting a workout, press firmly on the display and tap on Lock. When you are ready to end the workout, press firmly again and first tap on Unlock.
It may otherwise help to unpair and re-pair your watch. The Watch app on your iPhone takes a backup of your watch when unpairing via the app. Choose to Restore from Backup when offered the option during set up. Most data and settings will be restored, with some exceptions (eg Apple Pay cards, passcode).

This has been ongoing for last 3 months. Even took it into the Apple Store and they were no help except to send back to Apple to have it looked at.

Do you mean that you had already tried them before asking your question? If so, please note that, when asking questions here, it is helpful - to avoid a duplication of effort - to explain at the outset any steps that you have already tried.

Do you mean that the watch has already been sent to Apple? If not, then - given the steps that you have already tried - contacting Apple with a view to arranging this would be my next suggestion, as already outlined in my second reply.
