Q: Why do my photos delete from the mac?

Megan,

You say " I have iCloud photo sharing switched on", but what about "iCloud Photo Library"?

If iCloud Photo Library is enabled your devices will be in sync.  iCloud will ensure, that you are seeing the same photos on all devices. So, if you delete a photo from your iPhone, it will be removed from the Mac as well. Disable iCloud Photo Library on your iPhone, if you do not want the same photos on the iPhone as on your Mac.

the entire purpose of iCloud Photo Library is to keep all libraries the same, in sync  --  Any change made to any device - addition, deletion or edit - is done on all devices
