In Microsoft Word, one selects a word, then clicks on the Highlight pane in the toolbar above - and the word is now highlighted.
In Pages 5, a lengthy 5-step procedure has been introduced to highlight words.
Is there a short-cut, or a way around this design flaw?
(I don't wish to highlight-with-comment - just highlight.)

You select the word(s) to receive the true highlight color, and then from the Advanced Options menu, you click the inkwell, or color globe of the Character Fill Color to set the highlight color. This is as good as it gets in any release of Pages v5.
I should have added that you can select your yellow highlighted text, and from the Character Styles pull-down, click the blue + symbol. Change the new entry name to Yellow Highlight. You will note a > appears at the end of that entry. Click on the > to reach a sub-menu that allows you to set a keyboard shortcut from F1 - F8 for this new character style.
Once the above is achieved, you can then select any text, and press either F8 or fn F8 (depending on your function key settings) and the text will attain a yellow highlight.

I think I'll have to stick with Word for now, as I do a fair bit of highlighting, & like simplicity.
You can make highlighting a Character Style and give that Character Style a fn key shortcut.
Otherwise use Pages '09 where as with most things it is simpler and more reliable.

What I showed you regarding the creation of a highlight character style is a one-button (function key) solution.
Thanks VikingOSX. I've never used character styles, so was a bit slow to catch on.
The first time I did what you said it opened iTunes & began playing me a tune.
But then I tried it with the function key (fn F8) & that worked fine.
It's a pity Apple got rid of a perfectly workable system, necessitating this. But now all is good, thanks a lot.
