It is my understanding the Apple Music app is unexpectedly quitting on you. I listen to music all day while I work so I know how important it is for that app to work.
Just to confirm, these are the steps you took to go back to a non-beta version of iOS:
Go back to the current version of iOS
If you're using iOS beta and want to go back to the current version of iOS, follow these steps:
- Make sure that you're using the latest version of iTunes.
- Put your device in recovery mode and restore it. If you turned on Find My iPhone, enter your Apple ID and password after the restore to activate your device.
- If you can't finish the restore, get help.
- After the restore is complete, you can set up your device from your archived backup. This backup should be from an earlier version of iOS.
It is important that recovery mode is used to restore the iPhone. This is the only way to completely remove the Beta software.
If the Apple Music app is still crashing, then the next step is to isolate the issue to either the software or the hardware. To do this, we are going to want to restore the iPhone as new. To restore the iPhone as new, following these steps:

Be sure to Set up your device as a new device rather than restore the device from the backup. Once the iPhone is restored as new, test and see if the Apple Music app works correctly. If the problem is no longer occurring, then go ahead and restore the backup using those same instructions:

This time, be sure to use the Restore your device instructions.
If the Apple Music app closes again, this would indicate that there is something being loaded from the backup that is causing the issue. If that happens, you would need to set up as new again, and then install the apps that you need back onto the phone, testing after each installation until you determine what App is causing the issue.
