I accidentally created an extra large photo book in the Photos app on my mac and need it to be large instead so that it fits with my other books. Can I change the size without losing everything?

When you change size available space changes and test probably will reflow and may get cut off if you go to a smaller book
Duplicate the book just in case (select it and press command and D) then click on the little book icon to the left of the buy book button and click on change Format and Size
Check the new size carefully to see if any changes occurred that cause problems
