To really edit them you need a real editor. The Mac App Store has many editors.
I read some of the review and the free or cheap ones do not seem to be that good.
Good ones cost $40 and up.
Best is not to safe as PDF until all editing is done or pay for a good editor

- In the note text, select the text you want to edit, or click where you want to add text, then make your changes.
The note moves to the top of the notes list because it’s the most recently modified.
