One way is to use the Contacts app to create a group with the desired recipients. Then when composing the email just type in the name of the group in the To: field.

Thanks. I can easily handle the Groups by entering the first letter of the Group, now that it has been pointed out to me. In earlier versions of Mail (and OSs), it was possible to select non-contiguous addresses in CONTACTS and enter them all at once into an address field. No longer?
