Thank you for using Apple Support Communities.
I understand that italics are not working in the Notes app on your iPhone 6s. I use the Notes app all the time on my iPhone, so I know how important it is that all features are working. I have a couple of things that I would like you to try.
First, it appears that the Notes app isn't responding like it should. Please try to force close the Notes app. The article below will help:
Force an app to close on your iPhone, iPad, or iPod touch
Next, use Restart your iPhone, iPad, or iPod touch, and give your iPhone a fresh restart, specifically, this section:
How to restart
- Press and hold the Sleep/Wake button until the red slider appears.
- Drag the slider to turn your device completely off.
- After the device turns off, press and hold the Sleep/Wake button again until you see the Apple logo.
Once you've restarted your iPhone, open the Notes app, and see if you are able to use italics now.

Thanks for trying those steps. I have a few more things for you to try.
First, it's a good idea to make a current backup of your iPhone's important data. The following article will help make sure that you have a backup:

Next, it's always a good idea to make sure that you have the latest software installed on your iPhone. The following article will help you update to the latest iOS software:

If you still have an issue after that, I would recommend using the following article to restore your iPhone to factory settings and then testing to see if the italics work. And then you can restore from your most recent backup. These resources will help:

Jul 18, 2016 11:18 AM in response to ehweilby Demo,I think that the next thing to try is to reset all settings. This will cause no data loss, but it will return all settings to out the box condition and you will never to enter all of the device settings again and that includes WiFi network passwords.
Settings>General>Reset>Reset all settings.
