Q: how do I separate my wife's apple ID from my own?
My wife and I now have several apple products and it is getting cumbersome to use the same apple ID for all of them. How do I set up a separate apple ID for my wife and move her products to her new ID?

Set up a new Apple ID for her and use family sharing to give her acces to the products you bought together. This will at least keep your other cloud services like mail and contacts separate.
and also her future purchases will be tied to her AppleID.
