Q: iPad Pro Pages template in Spanish

2. App content and language is dependent on your System Language, so if you have your iPad set to Spanish, it will all be in Spanish. Go to Settings->General->Language & Region->iPad Language and Set it to English

It's not spanish but pseudo latin filler text. To find out more about this common practice for templates, see

You just select the filler and type in your own text.
