to be a completely independent computer?

Your iCloud and any IMAP will sync. You could log in with a different Apple ID on the MacBook or you could disable sync to iCloud and IMAP account.

System Preferences > iCloud

Uncheck any items you don't want synced.

Mail > Accounts

Uncheck any accounts you do not want synced.
