Thanks for using the Apple Support Communities. Based on your post, I am understanding you have some questions about setting up your daughter's iPad with her own Apple ID as a child account using Family Sharing. I know it's important to understand how this feature works, and am happy to let you know what information will be accessible from your daughter's iPad.
With Family Sharing, you can set up an Apple ID for a child under the age of 13, which automatically enrolls the Apple ID in "Ask To Buy"--which means that once set up, you will be alerted when they attempt to download items (free or paid) from the iTunes and App Stores. It also allows you to share content purchased and downloaded amongst all members of the Family Share group. This means that if you have a song or app you've downloaded on one of your iOS devices, you have the option of sharing those purchases with your child, and vice versa. It also creates a Family Photo Album, so pictures taken on your device can be shared to everyone in the Family Group, if desired.
This does not allow them access to your iCloud content, though--your contacts, Calendar events, Reminders, Notes, Safari bookmarks, and iOS backups, for example, are not able to be accessed by anyone in the Family Share group without the direct use of your Apple ID and password. For more information on using an Apple ID for your child, check out this article: Family Sharing and Apple ID for your child
