I want to buy an iPhone 5s but I don't want to pay for it every month to use it. If it is possible to use the iPhone like an iPod Touch, could somebody explain to me how I would do this? Also, I've heard a message pops up everytime you turn the iPhone on if you don't use a SIM card. I don't think i'll need a SIM card if I use it like an iPod Touch, so is there any way to stop the message?

Yes you can use it like an iPod. Your best bet might to leave an inactive SIMS in it. You do not have to have a contract to use it just for Wi-Fi or Music. This may help:

That would be a great plan. for that you need to have
1. an inactive sim which has no plan
2. through wifi, you can use it like a iPod

If you are buying a used iPhone make sure it is not activation locked, it would be of no use to you.
If I wanted to use iMessage and FaceTime would it work if I used an Apple ID email to recieve call and messages since I wouldn't have a phone number?
It might be better to just buy an iPod Touch. It will work the same, except for the phone, which you don't want. You could also get a free prepaid SIM card, and just not reload it. I think you can do this for $10 with ATT: the SIM being free, but a minimum of $10 in credits.
