how do I manage what programs open when I turn on my Mac

System Preferences > Users & Groups > Login. Unlock the padlock (bottom left), select the item you want to remove, and click on the minus-sign.

Also, by default, all running programs when you shutdown will be started up again. You can disable that by unchecking the box on the Shutdown/Restart/Sleep dialog.
