a bleed is when the ink runs to the edge of a page. Normally a printer will leave a margin where the print mechanism doesn't print to, some printers can. In some instances if you need to print 8.75x11.25 you will need to print on larger paper and cut it since legal paper is 8.5x11 and won't fit your requested size.
My flyer is 8.5 x 11 but when I try to order the flyers the site says it needs to be 8.75 x 11.25 in order for them to print the flyers.
all printers and print bureaus are not the same. if they need to bleed 8.5x11 to the edge you may likley need paper bigger than that to make it bleed.
Your previous mention of 8.5 x 11 as legal size should have stated letter.
Some print shops want a bleed allowance of 3 mm or more on artwork. The OP's 8.75 x 11.25 quote is allowing 6.35 mm. Some print houses have a helpful support site with specifications for submitted content (e.g. printed dot com). Hopefully, the OP's printer choice has this helpful information available on their site.
Pages not providing printer registration and bleed marks, or full font embedding/conversion to paths, may be a pre-flight issue for the print shop.
The 8.75 x 11.25 you make a Custom Size (bottom of the Page Size list) in Page Setup under the File menu.
If you require a bleed that may be an an extra 1/4th inch all round but you need 3/8th for crop marks, all of which you will have to manually add to a Pages document as it has neither as a standard feature.
I would advise against using Pages as a DTP App, particularly if it is Pages 5.x as there is no color control you can easily manage and your black text and artwork is likely to come out as RGB or cmyk. Also resolution is a problem particularly with Charts, shadows, reflections and overlapping vector and bitmap images.
What format is your Printer expecting the file? Surely not .pages?
