Thanks for checking out the Apple Support Communities! I understand you're having trouble with the playback in your iMovie app on your iPod touch; it's only allowing you to play from the beginning while editing. I can understand how this could make it difficult to edit and create projects and I'm happy to offer some suggestions.
If you haven't already, I recommend to try restarting your iPod and then test it out again.

I also recommend making sure that your iPod and the iMovie app are both up to date. To check for an app update, open the App Store, then tap on Update in the bottom right corner and make sure there are no pending updates for iMovie. You can find the info for updating your iPod below. This article also includes information on backing up.
Update the iOS software on your iPhone, iPad, or iPod touch
If everything is up to date, the next step I recommend is to try creating a new project with the same content and then test it out. I also recommend to try creating a new project using different content to see if the same thing occurs to help narrow down the issue. This will help you determine if there's an issue with the project you're working on or with the content that you are using.
