If it's in good nic, other than the missing sim tray, I would keep it tucked away and buy an iPod Touch (even a used one) and then set up a saved search in ebay for the tray and try and get hold of one.
It may be easier to buy a whole phone, I just did an ebay search for the whole phone and they are ranging from £35 for one with a smashed screen up to £3,500 for an unboxed one.
