Thanks for joining the Apple Support Communities, Djsbull!

Shuffling your music is a great way to enjoy your entire library without having to play your artists, albums, songs or playlists in order. The following resource, teaches us about the "Shuffle" feature on your iOS device:

Use Apple Music in the Music app

Tap   at the bottom of the Now Playing screen to shuffle the songs in a playlist or album. You can also ask Siri to shuffle your music.

You will find this same icon in the "Now Playing" bar within the iTunes application on your Mac as well. Highlighting this icon in blue, means that your selected playlist or album will shuffle as it plays.

    Happy listening!

I assume that you have iCloud Music Library turned ON because the instructions from Darren.S, while it would play all your music library randomly, it also requires you to either (1) download your entire library to your iPhone or (2) use data - unless you are always on Wifi - to stream your entire library.
