What does it mean when there is one person on a folder icon?
By default, that's the System folder icon for your computer Users files. If you have more than one user account set up, each user will have a separate folder inside the Users folder.

The folder labeled "Applications" is blue while the folder labeled "Bookkeeping" is gray with a head and shoulders in it. I'm wondering what it means when the folder is gray with the head and shoulders.

Those two folders have custom folder icons. They were likely created by an app that you installed and/or just tried out. Do you have any app that contains Bookkeeping in its name? Or just look inside the folders for a clue to what created it. The folder with "alias" in its name is just a shortcut to the other folder and can be deleted.
Icons can be customized in their Get Info windows (Command+I).

Applications can also scarf icons directly from the CoreTypes/Resources folder.
The icons on the screenshot do not look like they are from system resources.
