Have I understood the instructions re using HomeKit away from home ? I read the instructions as I have to have an Apple TV or I can't use HomeKit away from home. Is that the correct understanding ? Thank you !

It depends on the product, but yes in some cases they do use an Apple TV as a hub so you can access the service from afar.

I take it that if the product has an app that enables you to use or see the product when away from home then HomeKit will continue to work away from home for that product and Apple TV isn't required ? If not I can't really see the advantage of me starting to use HomeKit
No, each product will require a hub to work outside of the network, some devices/services mat come with their own hub, some may use other devices such as the Apple TV.
