I understand that you're not seeing most of your contacts' information when in the Contacts app on your iPhone. I know that it's important to be able to easily access this information, so I'm happy to provide some direction to help with this.
To start, open the Contacts app, and tap Groups in the upper left corner. From here, make sure that you've selected Show All Contacts.
If you do not have the Groups option, or you still don't see all of the information after checking that, then you'll want to look at how your contacts are synced. If you are using iCloud to sync your contacts, this article will show you some troubleshooting steps:
Get help using iCloud Contacts, Calendars, or Reminders - Apple Support
Turn off iCloud Contacts, Calendar, or Reminders and turn it back on
- Tap Settings > iCloud.
- Turn off Contacts
- If you see your Contacts on iCloud.com or any of your devices, you can choose Delete from My [device]. If not, choose Keep on My [device].
- Wait a few minutes, then turn on Contacts
If you are using another service such as Google, Yahoo, or Hotmail/Outlook.com to sync your contacts, then open Settings > Mail, Contacts, Calendars. Tap on the account, and ensure that Contacts is turned on.
Thanks for using the Apple Support Communities, cheers!

Is it a setting we've set by mistake? If more then YOU are using the same Apple ID for iCloud the other person(s), you too, can inadvertently delete contacts from your device by deleting the contacts from their/your device. Please follow the instructions stuckboss provided to continue to use the same Apple ID for iCloud in order to manage your contacts. Ultimately, for best user experience, everybody involved needs to have their own Apple ID.
