There is no direct contact - email or phone - with Apple Human Resources(HR) that is known in the wild.
Calling the Apple Store "may" provide help - but it is likely that even the Store Manager would not be involved in the 1st interview, but rather an Apple Recruiter (an HR employee) - which in the US would be via FaceTime or Skype
You say the webpage is reporting "fully booked" which is telling us that the process is not fully broken, if at all.
A certain "time slot" may well be "fully booked"
Have you picked another "time slot" and tried again?
