What kind of message? Email, iMessage, SMS, etc.?

For an iMessage or SMS (assuming your carrier supports MMS), you tap on the camera icon which is just to the left of the text field where you would type your message. For an email, when composing a message, tap somewhere in the body of your message, and hold your finger on the screen for a few seconds. When you see options such as "Select," "Select All," and so on, tap the right arrow until you see the "Insert Photo or Video."
