I understand that you are looking to change or remove the letterboxing on the movies you watch in iTunes. I know that it's important to have control over your media, so I'm happy to provide some clarification for this.
Check out what this article has to say about underscanning:
About overscan and underscan on your Mac, Apple TV, or other display - Apple Support
Underscan

Underscan is usually intended, and refers to black bars that appear around a movie or show. The bars appear because the content was filmed in a different proportion than your TV screen. Here are some examples:- Black bars appear above and below a movie because it has a wider aspect ratio than your TV screen.
- Black bars appear left and right of a TV show, because it has a smaller aspect ratio than your TV screen.
This means that in order to not see the letterboxing, you would need both the video and the display to have the same aspect ratio.
Thanks for using the Apple Support Communities, cheers!
