You can set the Rip format in Preferences->General->Import Settings.

MP3 files compress the audio and since I will be using the audio files for a radio station via software automation on a Mac, the audio processing gear can create conflicts with the compressed files and the result is a noisy or unclean audio file. Only compression free audio will result in the cleanest possible audio. Thus a .wave, .pcm or .aiff format is the best format for me to use.
