When I look at the timeline settings in iMovie (on Mac), the only options are "1080p 60".
Even though all clips imported are 2.7k... :/

I noticed that when I create a new project and only add one 4K clip (nothing else), then I get the options: 540, 720, 1080, 4k when share to file.
So, Apple seems to skip the 2.7k export for some reason?

Any iMovie that uses mixed media formats and dimensions would also be limited to those smaller dimension exports.
But iMovie and your camera can make some very great looking videos. 99% of the world doesn't even have a display that could showcase beyond 1080 sizes.

When I take a video with my Hero 4 black at 4k 30fps and then do some modifications in iMovie, then it allows me to export in 4k res to file, but when I take a video at 2.7k 48/60 fps and do the same modifications iMovie only allows me to export in 1080p. What could possibly be the problem? It's just weird that it allows me to export in 4k but not in 2.7k.

You will be editing in 2.7k though (I think) so the quality of a 1080p export should be very good and you should be able to take advantage of zooming and re-framing your video clips without loss of quality when exported at 1080p.
