It used to be simple to just be able to check the iTunes folders I wanted to transfer to my iPad. That option no longer comes up for me, and what does transfer to my iPad is erratic and unreliable. I have tried multiple methods to get the needed content transferred.
Nothing much has changed.
You just go to the music tab of your iPhone from iTunes on your computer. Select what you want.
Sync.
