Newer iOS version contains bugs and security fixes.

As long as your device is supported, it's best to update.

It's generally good practice to keep the OS updated. As it not only provides bugs and security fixes. But also new features and sometimes ir required by newer Apps.

But nobody is forcing you to update if you don't want to. You can totally disregard the update if you don't want to update.
