Why can't I group my photos the way I want on El capitan?

How do you want to group them?

I had Snow leopard until 3 days ago and photos were grouped by event. If I went on holidays I wanted all photos to be as a group ( album) not separated by date. I also want to be able to merge photos by an interest say flowers or my pet.
Making a guess here: you seem to be using the new Photos.app and with that the way to make your own groupings is to make Albums.
