how do I set up a daily playlist for podcasts on Iphone 5s

Without any further explanation of what you want the playlist to do, it's hard to suggest anything specific...

You can just switch to the Unplayed episode list and start listening to it. As you complete playing the episode, it will be removed from the list, so it's always "fresh" the next time.
