garageband 10.1.2 start / open - creating project

I have a new iMac which has Garageband 10.1.2 on it. I can't say that I'm happy about it. Whenever I open it up, it gives me the option to whether I want to choose templates etc but when clicking on "empty score" a drop down menu falls from the top asking me if I want to use Mac sounds, record from a microphone, use live instruments etc. I find this deeply annoying. I have asked for an empty score, after all.


Even when clicking on "software instruments," it loads up Classic Piano to begin with. From then I can use whatever I want, but when I delete the Track 1/Classic Piano, the drop down menu starts up again!! This was never a problem with older versions of Garageband. I dont know why Apple have to confuse things!!
