TRying to download some apps: pandora, YouTube, FaceTime, Netflix, to name a few but keeps telling me I need to update but my laptop says I'm up to date with iOS 5.1.1 but appstore says I need8.0 or higher

iOS 5.1.1 is as far as a first generation iPad can be updated.
Most apps have a minimum requirement of iOS 7 or later now.
You would have to purchase a new iPad in order to run the latest iOS version.
A first generation iPad (the one without a camera), cannot be updated beyond iOS 5.1.1. It simply cannot support newer iOS versions.
If you need to download Apps but they require a newer iOS version:
Download the App to iTunes on a computer first, with the same Apple ID as the one being used on your iPad, and then follow this support document and see if the developers offer compatible versions for older versions of iOS, many do.
