how do I sync my iPod to iTunes?

Hi,

I have some music on my iPod that apparently isn't in my iTunes account or saved in my music file on my mac. How do I transfer that music off my iPod into iTunes? When I click Sync Music on the device it wants to delete the music on the device which is the total opposite of what I want to do.
